
The grape varieties
The vineyard
is the main source of product quality, and this is why the winemakers of the Bivongi doc Consortium carefully select which vines to plant in relation to position and soil, because each variety expresses its best in terms of aroma, taste and personality if placed in the best possible conditions.
The environmental and cultivation conditions of the vineyards intended for the production of Bivongi Doc wines must be those traditional to the area or otherwise suitable for giving the grapes and wines derived from them their specific quality characteristics.
They are therefore
to be considered suitable, for the purposes of registration in the vineyard register, only those located on soils with good exposure and hilly and foothill slopes, excluding valley floors and those above 800 meters above sea level.
The planting distances, the forms of cultivation, with the exclusion of those of the expanded type, and the pruning systems, short, long and mixed, must be those generally used or in any case suitable for not altering the characteristics of the grapes and wines.
The methods
of cultivation follow principles of sustainability and low environmental impact, the vineyards are traditionally worked by hand, benefiting not only the quality of the wines but also the protection of the landscape.
